Ingredients

  • Cherry tomatoes (halved)
  • Cucumber slices
  • Lettuce or spinach
  • Boiled chickpeas or beans
  • Cooked pasta or quinoa (optional)
  • Feta cheese cubes
  • Olive oil + lemon juice
  • Salt & pepper

Instructions

  1. Add dressing first: olive oil, lemon juice, salt, pepper.
  2. Layer firm items next: chickpeas, cucumber, pasta.
  3. Add tomatoes and cheese.
  4. Finish with leafy greens on top.
  5. Close jar and refrigerate up to 3 days. Shake before eating.
